About a year ago my daughter introduced me to flourless banana pancakes, and I’ve been eating them ever since. I’ve shared them with just about everyone I know, and everyone seems to love them.

Pancakes with fresh berries

Ingredients (serves 1)

1 ripe banana

1 egg

½ tsp. vanilla extract

¼ tsp. ground cinnamon

1/8 tsp. baking powder

chopped walnuts (optional)

Maple syrup, agave or honey (optional)

Fresh fruits (optional)


Heat skillet on top of stove to medium heat. While pan is heating, mash banana well and mix in egg, baking powder and cinnamon. Spray pan with non-stick spray , and pour 2 tbsp. of batter at a time and cook until bottom appears set (about 1-2 minutes). Flip with spatula and cook additional minute. Serve immediately, topped with fresh fruit and maple syrup if you like. Enjoy!
