Sautéed Delicata Squash with Spinach and Cheese Ravioli Recipe

Delicata squash is a variety of winter squash with cream-colored cylindrical fruits striped in green or orange that are cooked. It is also known as peanut squash, Bohemian squash, or sweet potato squash
Ingredients: Serves 4
- 2-3 Delicata squash, 1” slices
- 2 TBSP olive oil
- 1 TBSP butter
- 2 cups fresh baby spinach
- 1/2 cup goat cheese
- 1/4 cup broth
- Ravioli, prepared as directed on package
Instructions:
- In a large sauté pan, add olive oil and
- Sauté squash on medium heat to soften
- Once soft, add spinach, butter and broth
- Stir in goat cheese
- Add in cooked ravioli
- Serve hot
