Delicata squash is a variety of winter squash with cream-colored cylindrical fruits striped in green or orange that are cooked. It is also known as peanut squash, Bohemian squash, or sweet potato squash

Ingredients: Serves 4

  • 2-3 Delicata squash, 1” slices
  • 2 TBSP olive oil
  • 1 TBSP butter
  • 2 cups fresh baby spinach
  • 1/2 cup goat cheese
  • 1/4 cup broth
  • Ravioli, prepared as directed on package

Instructions:

  1. In a large sauté pan, add olive oil and

  3. Once soft, add spinach, butter and broth
  4. Stir in goat cheese
  5. Add in cooked ravioli
  6. Serve hot
