I’ve always loved food. In fact, some of my best memories are of baking and cooking with my grandmother. Like many of us, I turn to food when I’m happy, sad, celebrating, or traveling.

I am also a pandemic success story. In March 2020, after starting a new job, suddenly everything changed. Disappointed, anxious, and stressed, I began spending more time in the kitchen, and eventually realized that food was leading me in the direction of my next career. I began with meal prepping for a friend, enlisted another friend to help, and in November 2021, formed An Extra Scoop, LLC.

So how does An Extra Scoop work? Every week, we release five new healthy, affordable, and delicious meals that do not require any preparation, only heating. I describe each meal as healthy comfort food because each is created with a healthy diet in mind, without leaving out the great tasting cheese and cream sauces. Two meal choices are always vegetarian or vegan, and three contain meat. Since there is no subscription or minimum requirement, you can order many meals, or just one or two. The deadline for orders is Tuesdays by 9 pm, and pickup or delivery takes place the following Friday or Saturday.

I love sharing the meals I learned how to cook from my mother and grandmother that I have cooked for my own family for years. My love for food continues to inspire me to create new, healthy, nourishing, and comforting recipes that I can share with others. An Extra Scoop is located at 265 Kenmore Avenue in Buffalo.
